I start folks with Gem, then Jitter then Isadora then MadMapper W/Syphon or Spout
I also teach and use VDMX ALOT

Very interesting! We also use MadMapper but more focus on content creation in AE. I had them begin by creating sculptures to map for projections and then move on to mapping buildings.
