So would there be anyway to use a touch screen with the HDMI port on this device?

I don’t know about a touch screen over HDMI, you might need screen over HDMI and touch over USB. Might be more trouble than it is worth. in Pd the objects are pretty small on the screen, and may be frustrating with a touch screen.
